Smoked Salmon Salad
In a large salad bowl, combine the mixed greens, sliced cucumber, diced avocado, red onion, cherry tomatoes, and capers.
Drizzle the lemon juice and olive oil over the salad. Season with salt and pepper to taste.
Gently toss the salad until everything is well combined and evenly coated with the dressing.
Arrange the smoked salmon slices on top of the salad.
Garnish with fresh dill, if desired.
Serve immediately and enjoy!
Cod Fillets
Preheat your oven to 400°F (200°C). Grease a baking dish lightly with olive oil or non-stick cooking spray.
Pat the cod fillets dry with paper towels and place them in the prepared baking dish.
In a small bowl, whisk together the olive oil, minced garlic, lemon juice, lemon zest, dried oregano, dried thyme, paprika, salt, and pepper.
Pour the mixture over the cod fillets, making sure to coat them evenly.
Bake the cod fillets in the preheated oven for 12-15 minutes, or until the fish is opaque and flakes easily with a fork. The cooking time may vary depending on the thickness of your fillets.
Once the cod is cooked through, remove it from the oven and let it rest for a few minutes.
Serve the baked cod fillets hot, garnished with fresh parsley and lemon wedges on the side.
Garlic Butter Shrimp
Heat a large skillet over medium-high heat. Add the butter and let it melt.
Once the butter is melted, add the minced garlic to the skillet. Sauté for about 1 minute, stirring frequently, until the garlic becomes fragrant.
Add the shrimp to the skillet in a single layer. Season with salt, black pepper, and red pepper flakes (if using).
Cook the shrimp for 2-3 minutes on one side until they start to turn pink.
Flip the shrimp over and cook for an additional 2-3 minutes, or until they are opaque and cooked through.
Once the shrimp are cooked, add the lemon juice to the skillet and stir to combine, allowing the flavors to meld for about 1 minute.
Remove the skillet from the heat and sprinkle chopped fresh parsley over the shrimp.
Serve the garlic butter shrimp hot, garnished with lemon wedges if desired.
